Rose Petal, Brown Sugar, and Calendula Cocoa Butter

Makes 1½ cups

1 cup unsalted butter, at room temperature

2 tablespoons dried rose petals

2 tablespoons calendula petals

2 tablespoons brown sugar

1 teaspoon cocoa powder

¼ teaspoon ground cinnamon

¼ teaspoon ground cardamom

Pinch of flakey salt

Place the butter in a small bowl and mash with a fork. Next, add the remaining ingredients, reserving the salt for later, and mix. Once combined, add the salt one pinch at a time until you are happy with the taste. Transfer the butter to a sheet of wax paper and form into your desired shape. Wrap it well and place it in the fridge to harden. The butter will keep for 1 month.

Start with at least 1 cup of unsalted butter and follow your own taste preference for these combinations. I’m hoping that you will use your own kitchen intuition for the ingredients. Over the years I’ve learned so much about cooking, but one of the most valuable things I’ve learned is how to follow my own personal flavor preference. Use the previous recipes as a guide for the ones that follow. Listen to your own taste buds and add or subtract as you see fit.
